Simple Summer Recipes from the Farms

Summer is the perfect time to take advantage of all the fresh produce available at your local farmers’ market or one of six Farms at NYCHA. If you are a resident who uses SNAP, you can use your EBT card at over a hundred farmers markets across New York City.

Here are two light and refreshing recipes* for the hot summer days ahead.

Dark Green Salad with Shallot Vinaigrette

Serves 4-6
Ingredients:

1 head of kale, washed and sliced into ribbons

1 head of Swiss chard, washed and sliced into ribbons

1 tablespoon of shallot, minced

2 tablespoons of desired herb, cut into ribbons

1 tablespoon of Dijon mustard

1 teaspoon of honey

2 tablespoons of lemon juice

1/3 cup of olive oil

Salt

Pepper

Directions:

Whisk shallot, mustard, honey, herb and lemon juice together in bowl. Slowly add olive oil. Season with salt and pepper. Pour over greens and toss to coat. Serve immediately.

Summer Cole Slaw

Serves 4-6
Ingredients:

½ cup of Greek yogurt

3 tablespoons of cider vinegar

1 tablespoon of honey

Salt

Pepper

6 cups of green cabbage, shredded

2 cups of carrots, grated

4 scallions, thinly sliced

Directions:

Combine yogurt, cider, vinegar, and honey in a small bowl. Whisk together and season to taste with salt and pepper. Combine cabbage, carrots, and scallions in a salad bowl. Add dressing and toss to coat. Season to taste with salt and pepper if necessary.
